Nicole's story

Cooking chicken parmigiana with baked veggies and garlic bread is Nicole Fletcher's favourite. Nicole loves MasterChef, and would love to work in a café one day and put her ideas into practice on the plate.
‘It has always been my dream,' she says. ‘I've always loved cooking.'
‘I like cooking healthy foods and I love being creative.'
Nicole has had a busy year. Until recently she was juggling 2 jobs, working in a real estate agency and at a Coles supermarket.
Nicole has taken a break from her work commitments to focus on her studies. She is completing a Certificate II in Hospitality.
After this finishes, Nicole hopes to complete a Certificate II in Retail.
‘I'd like to develop more skills,' she says.
Nicole has been recognised by Down Syndrome Association of Queensland for her positive approach to life, being chosen as a Ambassador for the organisation in 2011, along with Sam Leahy.
She delivers speeches and attends events as a representative for the organisation.
‘I was speechless (when I was chosen),' she says. ‘I was really happy.'
Taking the time to practise what she is going to say is important for Nicole. It gives her extra confidence when she is delivering a speech to an audience.
‘I have fun making speeches,' she says.
With an outgoing and friendly personality, Nicole doesn't shy away from the spotlight. When she celebrated her 21st birthday, she decided it would be more fun to enjoy the event at least a few times.
‘I had multiple birthday celebrations,' she says.
